Espita Mezcaleria is Washington DC’s premier southern Mexican restaurant and Mezcal bar, helmed by Ben Tenner as Chef de Cuisine.
Ben Tenner began his career at 14 as a line cook in a fine dining northern Italian restaurant in New Jersey. Upon graduating from college, Ben moved to Charleston to learn farm to table cooking at several high-end restaurants. From there his career took him back to DC to work as a sous chef at The Pig where he learned whole animal cooking and inventory management. His curiosity in developing kitchen systems led him to work at Founding Farmers and Matchbox as a “fixer” where he was assigned to underperforming or opening restaurants with the intention of refining or creating kitchen systems to ensure maximum profitability. Ben learned Mexican cuisine under Robert Aikens and his team of dedicated Mexican cooks that happily shared the cooking techniques of their home. He continued his training at “Criollo” in Oaxaca.
